banana bread from boxed cake mix

makes 1 loaf | active time: 15 minutes | full time: 1 hour 10 minutes | super easy

A cake mix turned banana bread. Why? Because I needed a quick carb source for half marathon training and I started a cake mix company. May as well make the best use of my mixes.

Ingredients

  • 1 package Ollin "Golden Hour" Yellow Cake Mix
  • 3 very ripe bananas (~1 cup mashed)
  • 2 large eggs, room temp
  • ¾ cup unsalted butter, melted
  • 1 tbsp whole milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 cup semi-sweet chocolate chips (NOT optional)

Instructions

  1. Preheat oven to 350°F. Grease one 9x5 loaf pans, set with parchment paper
  2. Mash bananas thoroughly 
  3. Whisk in mashed bananas, eggs, melted butter, milk, and vanilla.
  4. Mix dry ingredients in separate bowl with chocolate chips.
  5. Fold wet and dry ingredients together. Do not over mix.
  6. Bake 40-50 minutes, until a toothpick comes out with just a few moist crumbs.
  7. Cool in pans 15 minutes, then rack for at least 30 minutes before slicing.
