banana bread from boxed cake mix
makes 1 loaf | active time: 15 minutes | full time: 1 hour 10 minutes | super easy
A cake mix turned banana bread. Why? Because I needed a quick carb source for half marathon training and I started a cake mix company. May as well make the best use of my mixes.

Ingredients
- 1 package Ollin "Golden Hour" Yellow Cake Mix
- 3 very ripe bananas (~1 cup mashed)
- 2 large eggs, room temp
- ¾ cup unsalted butter, melted
- 1 tbsp whole milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 cup semi-sweet chocolate chips (NOT optional)
Instructions
- Preheat oven to 350°F. Grease one 9x5 loaf pans, set with parchment paper
- Mash bananas thoroughly
- Whisk in mashed bananas, eggs, melted butter, milk, and vanilla.
- Mix dry ingredients in separate bowl with chocolate chips.
- Fold wet and dry ingredients together. Do not over mix.
- Bake 40-50 minutes, until a toothpick comes out with just a few moist crumbs.
- Cool in pans 15 minutes, then rack for at least 30 minutes before slicing.
