Fudgy or Cakey Brownies? Have Both with One Recipe

A chocolate cake mix turned brownies. Why? Because BROWNIES. This recipe can go two ways with a simple change to give either a  cakey-fudgy texture or just straight fudgy. This recipe for the fudgy route can also become double chocolate chip cookies by simply scooping like cookie dough then chilling until firm before baking! Call it a three in one recipe if you will ;)

Ingredients

Ingredients 1: For Cakey Brownies 

  • 1 package of Ollin Anyday Chocolate Cake mix

  • 255g chocolate chips (either semi-sweet, or bittersweet, but choose your journey) 

  • ¾ cup unsalted or salted butter (melted) 

  • ¼ cup whole milk (room temp)

  • 2 large eggs (room temp)

  • 1 tsp vanilla extract 

Ingredients 2: For Fudgy Brownies OR Double Chocolate Chip cookies 

  • 1 package of Ollin Anyday Chocolate Cake mix

  • 255g chocolate chips (either semi-sweet, or bittersweet, but choose your journey) 

  • ¾ cup unsalted or salted butter (melted) 

  • ¼ cup whole milk (room temp)

  • 1 large egg (room temp) 

  • 1 tsp vanilla extract 

Instructions (For either brownie texture above!) 

  1. In a mixing bowl, stir the cake mix and chocolate chips together. 

  2. Melt the butter until just melted. 

  3. Whisk the melted butter, eggs, milk, and vanilla extract together. 

  4. Fold the wet ingredients with the dry ingredients until there are no longer visible dry bits. 

  5. Pour brownie batter into a 9x9 square pan or any pan close in dimensions. 

  6. Bake at 350°F the brownies for 35-40 min or until crackled on top. 

  7. Cool completely for cleaner cut brownies. Or dig right in after 10 min if you cannot wait that long. 

  8. ** For double chocolate chip cookies, follow the second ingredient list for the fudgy brownies (calling for 1 egg). Scoop the brownie batter like cookie dough (yield roughly 12-24 cookies depending on the scoop size) and chill for at least 2 hrs or until the dough balls are completely firm. Bake at 350°F for 11-13 min. Cool slightly and dip right into your favorite milk beverage!
