Arroz Con Leche Paleta Cake

makes 1 arroz con leche cake | active time: 40 minutes | full time: 90 minutes | medium

ingredients:

arroz con leche:

  • 1/2 cup of rice
  • 2 cups of milk
  • 2 tbsp sugar
  • cinnamon stick
  • pinch of salt

cake:

  • 1 package Ollin Golden Hour yellow cake mix
  • 1/3 cup of oil
  • 4 eggs
  • 2/3 cup of Santitos Horchata Concentrate
  • 1/4-1/2 cup milk (adjust for proper consistency)
  • Ground cinnamon to taste
  • OPTIONAL: Whipped cream 

instructions:

  1. prepare arroz con leche by combining all ingredients in pot and bringing to gentle boil
  2. simmer uncovered, stirring occasionally, for 25-30 minutes until the rice is very soft and the mixture is creamy. Remove the cinnamon stick and let it cool completely
  3. preheat oven to 350°F and grease a 9-inch round cake pan.
  4. mix cake ingredients until just combined—don't overmix
  5. gently fold desired amount of cooled arroz con leche into batter. If it becomes too thick, add milk by the tablespoon until the right consistent
  6. pour batter into prepared pan
  7. bake 35-40 minutes until golden and a toothpick comes out clean. 
  8. let cool 5 minutes, then run a knife around edges and flip onto serving plate.
  9. serve with whipped cream topping and ENJOY
