ingredients:
arroz con leche:
- 1/2 cup of rice
- 2 cups of milk
- 2 tbsp sugar
- cinnamon stick
- pinch of salt
cake:
- 1 package Ollin Golden Hour yellow cake mix
- 1/3 cup of oil
- 4 eggs
- 2/3 cup of Santitos Horchata Concentrate
- 1/4-1/2 cup milk (adjust for proper consistency)
- Ground cinnamon to taste
- OPTIONAL: Whipped cream
instructions:
- prepare arroz con leche by combining all ingredients in pot and bringing to gentle boil
- simmer uncovered, stirring occasionally, for 25-30 minutes until the rice is very soft and the mixture is creamy. Remove the cinnamon stick and let it cool completely
- 
preheat oven to 350°F and grease a 9-inch round cake pan.
 
- mix cake ingredients until just combined—don't overmix
- gently fold desired amount of cooled arroz con leche into batter. If it becomes too thick, add milk by the tablespoon until the right consistent
- pour batter into prepared pan
- bake 35-40 minutes until golden and a toothpick comes out clean.
- let cool 5 minutes, then run a knife around edges and flip onto serving plate.
- serve with whipped cream topping and ENJOY
